English muffin pizzas are a kid classic that can be enjoyed by all ages.
First, get creative with your toppings. For these, I used green bell pepper, sliced Roma tomatoes and baby spinach leaves, but I encourage you to use any veggies you have on hand. (Just don’t overload your muffin with too many toppings, or it might get soggy.)
Then, toss your mini pizzas into the oven for about 10 minutes and then your healthy and delicious snack should be done!
Ingredients
· 2 English muffins, sliced in half
· ⅓ cup mozzarella cheese, shredded
· 1 green bell pepper, diced
· 1 Roma tomato, sliced
· 3-4 fresh baby spinach leaves
Instructions
1. Pre-heat oven to 350 degrees and line a cookie sheet with aluminum foil.
2. Core, clean and de-seed the green bell pepper, and then dice; slice tomato; wash and pull stems off the spinach leaves.
3. Cut the English muffins in half and place an even distribution of mozzarella cheese on each half.
4. Next, top with green bell pepper, Roma tomato slices, and baby spinach.
5. Place on cookie sheet and bake at 350 degrees for about 10 minutes until the cheese is melted and the pizzas are golden brown.
