Special Programming: Answering the Need
With the tightening economy, increased middle class anxiety, home foreclosures and lengthening lines at soup kitchens throughout the United States, more and more and more Americans will be relying on the good will of their neighbors. This documentary examines why people decide to offer their time and money to answer the need. When and how to help people in poverty is an ancient ethical question. But in most cases, there remains a wall between the poor and everyone else. There is little direct contact between the haves and have nots. In this truly inspiring program, we hear the stories of people who give of their time and financial resources to help members of our society who are struggling -- and who often feel marginalized. Why are the givers motivated to help out? What benefits are gained by people who reach out to others in need? What kind of self-reflection is required to give wisely?

Roadside Chicken Recipe

(From the Internet with changes by Matt Albright)

1 cup white vinegar
1/2 cup vegetable oil
1/4 cup Worcestershire sauce
1 TBSP salt (Sea salt is preferred)
1 TBSP cane sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp white pepper
1/2 tsp celery salt

Add dry ingredients to a small bottle (a Worcestershire bottle with the shaker top is perfect). Add wet ingredients and shake bottle to combine. Shake frequently during cooking.

Start charcoal and let coals ash over. Spread over grill to form a uniform cooking area. If a gas grill is used, let the grill preheat to 300 degrees.

Place chicken on grill and apply sauce. Immediately close the lid. It is important to close the lid quickly to prevent flare-ups. Every five minutes, turn chicken and apply sauce. Move pieces around grill to ensure even cooking of all pieces. It seems to work out that about the time you run out of sauce (approximately 40-45 minutes) this chicken is done.

You cannot add too much sauce to the chicken while grilling. It will build up a nice layer of flavors.

The chicken may also be marinated in this sauce. Combine all ingredients (omitting the oil) and marinate the chicken in a shallow dish or Ziploc bag for 2-4 hours. Make fresh sauce for grilling.

*Safety Point* Should a large flare-up occur, lightly mist coals or fire with a spray bottle and close the lid.
